Con Huevos is now offering a new grab n’ go concept to the market named “Con Huevos Craves.”

The market, which opened Sept. 12, features some of the restaurant’s fresh Mexican breakfast and lunch staples.

New Omni-exclusive sandwiches will be on the menu.

This is Con Huevos’ first downtown restaurant, in addition to its Frankfort Avenue and Brownsboro Road locations.

Mayor Greg Fischer, Omni General Manager Scott Stuckey and Con Huevos co-owner Jesus Martinez kicked off the grand opening with a crack of the official first eggs Thursday morning.

“The Omni Louisville has elevated the hospitality and tourism business in our city, and their commitment to reflecting our city’s culture and personality is evident,” Fischer said. “Con Huevos Craves is another great local business that will showcase our city’s spectacular food culture, and perfectly complements the many Louisville products and services available here at Falls City Market.”

Added Stuckey: “We were looking for a local favorite to fill a much-needed niche downtown. Con Huevos is known for delicious food, run by a tight-knit family team. Their concepts and execution matched our vision for Falls City Market – to be a one-stop destination for authentic Louisville experiences and goods that everyone from out-of-state tourists to downtown residents can enjoy.”

The grab n’ go concept will join Fall City Market’s growing list of Louisville- and Kentucky-sourced foods, services and experiences.

“We are thrilled to open our third Con Huevos concept in the city’s most exciting hotel,” Martinez said. “When we launched Con Huevos, we wanted to offer locals a chance to enjoy Mexican breakfast and lunch in ways they hadn’t had before in Louisville. Now that we are in Falls City Market, we can share our vision with visitors from across the globe.”
